Preparation
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs and mix in the milk and melted butter.
- Combine the wet ingredients with the dry ingredients and stir until just combined; do not overmix.
Frying
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Drop spoonfuls of the batter into the hot oil, frying until golden brown on both sides.
- Remove from oil and place on paper towels to drain excess oil.
- Dust the warm beignets with powdered sugar before serving.
Notes
Store uneaten beignets in an airtight container at room temperature for up to a day. Reheat in a warm oven for 5 to 10 minutes for best texture.
