  • 1 tablespoon granulated sugar This will add a hint of sweetness to the dough.
  • 1/2 teaspoon salt Salt enhances all the flavors.
  • 1 tablespoon active dry yeast Fresh yeast will give your panzerotti better rise and texture.
  • 3/4 cup warm water Essential for activating the yeast. Make sure it’s about 110°F.
  • 1 tablespoon olive oil A little fat helps to make the dough softer.
Filling and Frying Ingredients
  • Nutella for filling Use high-quality Nutella for the best flavor.
  • Oil for frying Choose a neutral oil with a high smoke point like canola or vegetable oil.

Preparation
  1. In a bowl, combine flour, sugar, and salt. Mix well.
  2. In a small bowl, mix warm water with yeast. Let it sit for about 5 minutes until frothy.
  3. Pour the yeast mixture and olive oil into the flour mixture. Stir until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic.
  5. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  6. Once risen, punch down the dough gently and divide into small balls about the size of a golf ball.
Filling and Frying
  1. Flatten each ball into a disc and place about a tablespoon of Nutella in the center.
  2. Fold the dough over the filling and seal it by pressing the edges together.
  3. Heat the oil in a pot over medium heat. Carefully add the panzerotti to the hot oil and fry until golden brown, about 2-3 minutes per side.
  4. Remove with a slotted spoon and place on paper towels to drain any excess oil.

Notes

These treats are best served warm. Consider dipping them in melted chocolate or serving with a scoop of vanilla ice cream.
