Pastry
  • 1 package Puff pastry sheets Quality pre-made puff pastry for a flaky base.
Whipped Cream
  • 1 cup Heavy cream Use the freshest heavy cream for lightest whipped cream.
  • 3 tablespoons Powdered sugar Adds sweetness; easier to mix into cream than granulated.
  • 1 teaspoon Vanilla extract Use pure vanilla extract for better flavor.
Filling and Toppings
  • 1 cup Fresh raspberries Choose ripe firm raspberries for best sweetness.
  • 1/4 cup Chopped toasted almonds Optional; adds crunch and nutty flavor.
  • 1 tablespoon Orange zest Optional; adds freshness to the dessert.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut it into rectangles.
  3. Place the pastry rectangles on a baking sheet and bake until golden brown, about 15-20 minutes.
  4. Let the pastry cool before proceeding.
Whipping Cream
  1. In a bowl, whip together heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assembling
  1. Slice each cooled pastry piece in half horizontally.
  2. Fill the bottom layer with whipped cream and top with fresh raspberries.
  3. Press the top layer of pastry back on and dust with powdered sugar before serving.
Serving
  1. Chill for 10-15 minutes for cleaner slices.
  2. Serve family-style on a decorative platter, optionally with extra raspberry sauce or whipped cream on the side.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Re-bake at 350°F (175°C) for a few minutes if slices get soggy.
