Preparation
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and cut it into rectangles.

- Let the pastry cool before proceeding.
Whipping Cream
- In a bowl, whip together heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assembling
- Slice each cooled pastry piece in half horizontally.
- Fill the bottom layer with whipped cream and top with fresh raspberries.
- Press the top layer of pastry back on and dust with powdered sugar before serving.
Serving
- Chill for 10-15 minutes for cleaner slices.
- Serve family-style on a decorative platter, optionally with extra raspberry sauce or whipped cream on the side.
Notes
Store any leftovers in an airtight container in the refrigerator for up to three days. Re-bake at 350°F (175°C) for a few minutes if slices get soggy.
