Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, vanilla extract, and mashed bananas until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until combined.
Baking
- Drop cookie dough onto baking sheets lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden.
Creamy Topping
- While the cookies are cooling, whip together the cream cheese, heavy whipping cream, powdered sugar, and vanilla extract until fluffy to create the creamy banana layer.
- Once cookies are cool, spread the creamy banana layer on top of each cookie.
- Finish with a dollop of whipped cream and a sprinkle of crushed graham crackers.
Notes
Store cookies in an airtight container, layering parchment paper between them if necessary to prevent sticking. Reheat in the oven for 5 minutes at 350°F to recapture freshness.
