Preparation
- Combine warm milk and yeast in a bowl. Let sit for 5 minutes until foamy.
- Stir in sugar, egg, yolk, melted butter, and vanilla extract until well combined.
- Add 2 cups of flour and salt, mixing together. Gradually add remaining flour until dough forms.
- Add blue food coloring and knead until smooth. Transfer to a greased bowl, cover, and let rise for 1 to 1.5 hours.
Filling & Assembly
- Mix softened butter, brown sugar, and cinnamon in a separate bowl. Stir in crushed chocolate cookies and mini chocolate chips.
- On a floured surface, roll dough into a 14 by 9-inch rectangle. Spread filling evenly, then roll tightly from the long side and slice into 12 rolls.
- Place rolls in a greased 9 by 13-inch dish. Cover and let rise for 30 to 45 minutes. Preheat oven to 350°F.
- Bake rolls for 20 to 25 minutes until golden brown.
Icing
- Beat together cream cheese and softened butter until smooth.
- Gradually add powdered sugar, vanilla, and enough milk for a creamy consistency.
Serving
- Drizzle icing over warm rolls. Sprinkle with crushed cookies and extra chocolate chips if desired.
