Preparation
- In a large bowl, mix together the Greek yogurt, honey, vanilla extract, cinnamon, and protein powder until smooth.
- Gently fold in the chopped strawberries and raspberries. Be careful not to mash the berries too much.
- Line a baking sheet with parchment paper and use a spoon to drop dollops of the yogurt mixture onto the sheet. Freeze for 1 hour until firm.
Chocolate Coating
- In a small bowl, melt the chocolate chips and coconut oil in the microwave, stirring every 30 seconds until fully melted.
- Dip each yogurt dollop into the melted chocolate and place them back on the baking sheet. Freeze again for 10-20 minutes until the chocolate hardens.
Serving
- Enjoy immediately or store the bites in an airtight container in the freezer. Let them sit at room temperature for 15 minutes before eating for optimal texture.
Notes
Use silicone molds for fun shapes instead of a baking sheet. Feel free to mix in other fruits like bananas or blueberries.
