  • 1 cup granulated sugar You can reduce this slightly for a less sweet cookie.
  • 0.5 cup packed brown sugar Pack it firmly for a deep flavor.
  • 1 teaspoon salt Use kosher salt for a cleaner taste.
  • 2 teaspoons vanilla extract Pure vanilla extract enhances flavor much better than imitation.
  • 1 large egg Room temperature eggs blend better with the dough.
  • to taste Chocolate chips, nuts, or other flavorings of your choice Mix and match—as creative as your family wishes!

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, sift together the flour and baking soda.
  3. In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and salt until smooth.
  4. Add the vanilla extract and the egg, mixing well.
  5. Gradually add the flour mixture, stirring until just combined.
  6. Divide the dough into three equal parts and add different flavorings to each portion.
  7. Roll the dough into balls and place them on a baking sheet, spacing them well apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are golden.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store biscotti in an airtight container at room temperature for about a week. You can freeze them for up to three months. To regain their crunch, re-bake at 300°F (150°C) for about five minutes.
