  • 3 pieces very ripe bananas The riper, the better for sweetness and moisture.
  • 1/4 cup natural smooth peanut butter Choose a brand where oil separates for best flavor.
  • 1 teaspoon vanilla extract Opt for pure extract for the best flavor.
  • 1 1/4 cups quick-cooking or instant oats Regular rolled oats can also be used for more chew.
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup chocolate chips For a fun twist, try dark chocolate chips or peanut butter chips.

Preparation
  1. Preheat your oven to 350°F and prepare a 9x5-inch loaf pan with oil or parchment paper to prevent sticking.
  2. In a large bowl, mash the bananas until they are almost smooth.
  3. Add the peanut butter and vanilla extract, mixing until you have a uniform mixture.
  4. Stir in the instant oats, salt, and baking powder until well combined.
  5. Gently fold in 1/3 cup of the chocolate chips.
  6. Pour the mixture into the prepared loaf pan and level it out. Top with the remaining chocolate chips.
Baking
  1. Bake in the oven for 25-30 minutes, or until a knife inserted in the center comes out clean.
  2. Let cool for at least 10 minutes before cutting into pieces.

Notes

Store bars in an airtight container in the refrigerator for up to a week. You can freeze individual bars wrapped tightly.
