Preparation
- Preheat your oven to 350°F and prepare a 9x5-inch loaf pan with oil or parchment paper to prevent sticking.
- In a large bowl, mash the bananas until they are almost smooth.
- Add the peanut butter and vanilla extract, mixing until you have a uniform mixture.
- Stir in the instant oats, salt, and baking powder until well combined.
- Gently fold in 1/3 cup of the chocolate chips.
- Pour the mixture into the prepared loaf pan and level it out. Top with the remaining chocolate chips.
Baking
- Bake in the oven for 25-30 minutes, or until a knife inserted in the center comes out clean.
- Let cool for at least 10 minutes before cutting into pieces.
Notes
Store bars in an airtight container in the refrigerator for up to a week. You can freeze individual bars wrapped tightly.
