I’m Amelia Hart, a 38-year-old chef living in Portland, Oregon, and my life has always followed the rhythm of the seasons. For me, cooking isn’t just about putting food on the table it’s about listening to what the land is offering at this very moment. I grew up in Vermont, where my parents ran a small roadside café that changed its menu as often as the weather. We cooked with whatever was fresh tomatoes still warm from the sun, apples we picked that morning, or a handful of wild herbs my dad foraged from the woods behind our house.
